Description

A delightful and flavorful winter berry jam infused with vanilla, perfect for spreading on toast or using in desserts.

Ingredients

Scale
  • 2 cups mixed winter berries (such as cranberries, blueberries, and raspberries)
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup water

Instructions

  1. In a medium saucepan, combine the mixed berries, sugar, lemon juice, and water.
  2. Bring the mixture to a boil over medium heat, stirring occasionally.
  3. Reduce the heat and let it simmer for about 15-20 minutes, or until the berries have broken down and the mixture thickens.
  4. Stir in the vanilla extract and cook for an additional 5 minutes.
  5. Remove from heat and let it cool slightly before transferring to sterilized jars.
  6. Seal the jars and store in the refrigerator for up to 2 weeks.

Notes

  • For a smoother jam, you can blend the mixture before transferring it to jars.
  • Feel free to adjust the sugar based on the sweetness of the berries.
  • This jam can also be used as a filling for pastries or as a topping for desserts.
