Description

Vegan Veggie Pinwheels with Broccoli and Carrots are a delicious and healthy snack or appetizer, perfect for parties or meal prep.


Ingredients

  • 1 large tortilla
  • 1/2 cup hummus
  • 1/2 cup shredded carrots
  • 1/2 cup chopped broccoli
  • 1/4 cup bell peppers, diced
  • 1/4 cup spinach, chopped
  • Salt and pepper to taste

Instructions

  1. Spread hummus evenly over the tortilla.
  2. Layer the shredded carrots, chopped broccoli, diced bell peppers, and chopped spinach on top of the hummus.
  3. Season with salt and pepper to taste.
  4. Roll the tortilla tightly from one end to the other.
  5. Slice the rolled tortilla into pinwheels.
  6. Serve immediately or refrigerate until ready to serve.
