Description

Delicious vanilla cupcakes topped with colorful pastel frosting, perfect for any celebration.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 1 3/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • Food coloring (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 tablespoons heavy cream (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  7. Fill the cupcake liners about 2/3 full with batter.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool completely before frosting.
  10. For the frosting, beat together the butter and powdered sugar until smooth, then add heavy cream and mix until fluffy. Divide into bowls and add food coloring as desired.
  11. Frost the cooled cupcakes with the pastel frosting.

Notes

  • Make sure the butter is at room temperature for easier mixing.
  • Feel free to mix different colors for a fun effect.
  • Store cupcakes in an airtight container at room temperature for up to 3 days.
