- 4 oz goat cheese
- 1 cup fresh cranberries

Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/2 inch rounds and place them on a baking sheet.
- Drizzle with olive oil, and season with salt and pepper.
- Bake for 25-30 minutes until tender and slightly caramelized.
- In a saucepan, combine cranberries, balsamic vinegar, and honey. Cook over medium heat until cranberries burst and the mixture thickens.
- Remove the sweet potatoes from the oven and let them cool slightly.
- Top each sweet potato round with a dollop of goat cheese.
- Drizzle the cranberry balsamic glaze over the goat cheese.
