Description

A delicious appetizer featuring roasted sweet potato rounds topped with creamy goat cheese and a tangy cranberry balsamic glaze.


Ingredients

  • 2 large sweet potatoes
  • 4 oz goat cheese
  • 1 cup fresh cranberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/2 inch rounds and place them on a baking sheet.
  3. Drizzle with olive oil, and season with salt and pepper.
  4. Bake for 25-30 minutes until tender and slightly caramelized.
  5. In a saucepan, combine cranberries, balsamic vinegar, and honey. Cook over medium heat until cranberries burst and the mixture thickens.
  6. Remove the sweet potatoes from the oven and let them cool slightly.
  7. Top each sweet potato round with a dollop of goat cheese.
  8. Drizzle the cranberry balsamic glaze over the goat cheese.
  9. Serve warm and enjoy!
