Description

A delicious and festive Sweet Potato & Cranberry Gratin that combines the sweetness of sweet potatoes with the tartness of cranberries, perfect for holiday gatherings.


Ingredients

  • 2 pounds sweet potatoes, peeled and sliced
  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced sweet potatoes, cranberries, heavy cream, brown sugar, cinnamon, nutmeg, salt, and pepper.
  3. Layer half of the sweet potato mixture in a greased baking dish.
  4. Sprinkle half of the cheddar cheese over the first layer.
  5. Add the remaining sweet potato mixture on top.
  6. Top with the remaining cheddar cheese.
  7. Cover with aluminum foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and bubbly.

Notes

  • For a vegan version, substitute heavy cream with coconut cream and cheese with a dairy-free alternative.
  • Can be prepared a day in advance and baked before serving.
  • Adjust the sweetness by adding more or less brown sugar based on your preference.
