Description

Sweet Potato and Bacon Skewers are a delicious and savory appetizer that combines the sweetness of roasted sweet potatoes with the salty, smoky flavor of bacon, perfect for any gathering.


Ingredients

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 8 slices of bacon, cut in half
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato cubes with olive oil, paprika, salt, and pepper.
  3. Wrap each sweet potato cube with a half slice of bacon and thread onto the soaked skewers.
  4. Place the skewers on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 25-30 minutes, turning halfway through, until the bacon is crispy and the sweet potatoes are tender.
  6. Remove from the oven and let cool slightly before serving.
