Instructions
- Preheat the oven to 350°F (175°C).
- Season the beef roast with salt, pepper, and mustard.
- In a large skillet, heat the vegetable oil over medium-high heat.
- Sear the beef roast on all sides until browned.
- Remove the roast and set aside. In the same skillet, add the sliced onions and cook until caramelized.
- Place the roast in a baking dish and top with the caramelized onions.
- Pour the beef broth around the roast.
- Cover with foil and bake for 2-3 hours, or until the meat is tender.
- Let the roast rest for 10 minutes before slicing.
- Garnish with fresh parsley and serve.
