Description

A deliciously sweet and buttery shortbread cookie infused with strawberry flavor and drizzled with white chocolate.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup dried strawberries, chopped
  • 1/2 cup white chocolate chips
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cornstarch, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. Fold in the chopped dried strawberries and white chocolate chips.
  7. Shape the dough into a log and wrap it in plastic wrap. Chill in the refrigerator for at least 30 minutes.
  8. Slice the chilled dough into 1/4 inch thick rounds and place them on a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a more intense strawberry flavor, consider adding a few drops of strawberry extract.
  • These cookies can be stored in an airtight container for up to a week.
  • Drizzle additional melted white chocolate on top for decoration if desired.
