- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup sugar
- 4 (8 oz) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 4 large eggs
- 2 cups fresh strawberries, sliced
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla and mix well.
- Add eggs one at a time, mixing well after each addition.
- Pour half of the cream cheese mixture over the crust.
- Layer half of the sliced strawberries on top of the cream cheese mixture.
- Pour the remaining cream cheese mixture over the strawberries.
- Bake for 50-60 minutes or until the center is set. Let cool completely.
- Whip the heavy cream with powdered sugar until soft peaks form. Spread over the cooled cheesecake.
- Garnish with remaining strawberries before serving.
Notes
- For best results, chill the cheesecake overnight before serving.
- Use fresh strawberries for the best flavor.
- Can be made a day in advance.
