- 1 cup shredded cabbage

- 1 cup sliced bell peppers

- 1/2 cup fresh cilantro, chopped

- 1/4 cup peanuts, crushed
Instructions
- Cook the rice noodles according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the shredded cabbage, carrots, bell peppers, cucumber, cilantro, and mint.
- Add the cooked rice noodles to the vegetable mixture and toss to combine.
- In a separate bowl, whisk together the peanut dressing ingredients until smooth.
- Drizzle the peanut dressing over the salad and toss gently to coat.
- Top with crushed peanuts before serving.
Notes
- For a spicier kick, add some chili flakes to the peanut dressing.
- This salad can be made ahead of time; just keep the dressing separate until ready to serve.
