Description

A delicious and healthy dish featuring salmon fillets rolled with a flavorful spinach and feta cheese filling.


Ingredients

  • 2 salmon fillets
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add chopped spinach and cook until wilted, then remove from heat.
  4. In a bowl, mix the sautéed spinach with feta cheese, salt, and pepper.
  5. Lay the salmon fillets skin-side down and spread the spinach and feta mixture evenly on top.
  6. Roll the salmon fillets tightly and secure with toothpicks.
  7. Place the pinwheels on a baking sheet and bake for 15-20 minutes or until the salmon is cooked through.
  8. Serve with lemon wedges.

Notes

  • For added flavor, you can include herbs like dill or parsley in the filling.
  • Make sure to remove the skin from the salmon if you prefer a skinless dish.
  • These pinwheels can be served warm or cold.
