Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add chopped spinach and cook until wilted, then remove from heat.
- In a bowl, mix the sautéed spinach with feta cheese, salt, and pepper.
- Lay the salmon fillets skin-side down and spread the spinach and feta mixture evenly on top.
- Roll the salmon fillets tightly and secure with toothpicks.
- Place the pinwheels on a baking sheet and bake for 15-20 minutes or until the salmon is cooked through.
- Serve with lemon wedges.
Notes

- Make sure to remove the skin from the salmon if you prefer a skinless dish.
