- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 8 small corn tortillas
- 1 cup mango, diced
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
Instructions
- In a bowl, combine shrimp, olive oil, chili powder, cumin, garlic powder, and salt. Mix well.
- Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until pink and cooked through.
- In another bowl, mix together mango, red onion, cilantro, and lime juice to make the salsa.
- Warm the corn tortillas in a dry skillet or microwave.
- Assemble the tacos by placing shrimp on the tortillas and topping with mango salsa.
- Serve immediately and enjoy!
Notes
- For extra heat, add diced jalapeños to the mango salsa.
- These tacos can be served with avocado slices or a drizzle of sour cream.
