Description

A delicious and creamy spaghetti dish featuring fresh spinach and sun-dried tomatoes, perfect for a quick weeknight dinner.


Ingredients

  • 8 oz spaghetti
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the sun-dried tomatoes and cook for 2-3 minutes.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in the grated Parmesan cheese until melted and smooth.
  6. Add the fresh spinach and cook until wilted.
  7. Toss the cooked spaghetti in the sauce until well coated.
  8. Season with salt and pepper to taste. Serve immediately.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or a plant-based cream.
  • Feel free to add grilled chicken or shrimp for extra protein.
