- 4 boneless, skinless chicken breasts
- 1 cup baby carrots
- 1 cup broccoli florets
- 1 cup diced potatoes
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- Add the baby carrots, broccoli, and diced potatoes on top of the chicken.
- In a small saucepan, melt the butter and stir in the minced garlic, thyme, rosemary, salt, and pepper.
- Pour the garlic butter mixture over the chicken and vegetables in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
