Description

A savory and tender slow-braised beef roast enhanced with a sweet and tangy cranberry balsamic glaze.


Ingredients

  • 34 lbs beef roast
  • 1 cup cranberry juice
  • 1/2 cup balsamic vinegar
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh rosemary for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Season the beef roast with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat and sear the beef roast on all sides until browned.
  4. Remove the roast and set aside. In the same skillet, add chopped onion and minced garlic, sautéing until softened.
  5. Deglaze the skillet with cranberry juice and balsamic vinegar, scraping up any browned bits.
  6. Add beef broth and bring to a simmer.
  7. Place the beef roast in a roasting pan and pour the cranberry balsamic mixture over it.
  8. Cover the pan with foil and braise in the oven for 3-4 hours, or until the meat is tender.
  9. Remove from the oven, let rest for 10 minutes, then slice and serve garnished with fresh rosemary.

Notes

  • For a richer flavor, marinate the beef roast overnight.
  • Serve with mashed potatoes or roasted vegetables.
  • Leftovers can be stored in the refrigerator for up to 3 days.
