A savory and tender slow-braised beef roast enhanced with a sweet and tangy cranberry balsamic glaze.

- 3–4 lbs beef roast
- 1 cup cranberry juice
- 1/2 cup balsamic vinegar
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh rosemary for garnish
Instructions
- Preheat the oven to 325°F (163°C).
- Season the beef roast with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat and sear the beef roast on all sides until browned.
- Remove the roast and set aside. In the same skillet, add chopped onion and minced garlic, sautéing until softened.
- Deglaze the skillet with cranberry juice and balsamic vinegar, scraping up any browned bits.
- Add beef broth and bring to a simmer.
- Place the beef roast in a roasting pan and pour the cranberry balsamic mixture over it.
- Cover the pan with foil and braise in the oven for 3-4 hours, or until the meat is tender.
- Remove from the oven, let rest for 10 minutes, then slice and serve garnished with fresh rosemary.
Notes
- For a richer flavor, marinate the beef roast overnight.
- Serve with mashed potatoes or roasted vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
