Ingredients

- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chocolate chips or festive sprinkles
Instructions
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips or sprinkles.
- Divide the dough in half and shape each half into a log about 2 inches in diameter.
- Wrap the logs in plastic wrap and refrigerate for at least 2 hours or until firm.
- Preheat the oven to 350°F (175°C).
- Slice the chilled dough into 1/4-inch thick rounds and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a festive touch, use colored sprinkles or holiday-themed cookie cutters.
- These cookies can be stored in an airtight container for up to a week.
- Dough logs can be frozen for up to 3 months; just slice and bake from frozen, adding a couple of extra minutes to the baking time.
