- 4 cups fresh corn kernels
- 1 cup heavy cream
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/2 cup breadcrumbs
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes.
- Gradually whisk in the heavy cream and milk, cooking until the mixture thickens.
- Add the cheddar cheese, Parmesan cheese, salt, black pepper, and cayenne pepper, stirring until the cheese is melted.
- In a large bowl, combine the corn kernels with the cheese sauce.
- Transfer the mixture to a greased baking dish and top with breadcrumbs.
- Bake for 25-30 minutes or until the top is golden brown and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a spicier version, increase the cayenne pepper.
- Can be made ahead of time and reheated before serving.
- Use fresh corn for the best flavor, but frozen corn can be substituted.
