Delicious and romantic quesadillas perfect for a Valentine’s Day dinner.
Ingredients

- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or mozzarella)
- 1 cup cooked chicken, shredded
- 1/2 cup diced bell peppers
- 1/2 cup sliced mushrooms
- 1/4 cup chopped fresh cilantro
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add bell peppers and mushrooms, sauté until tender.
- In a bowl, mix shredded chicken, sautéed vegetables, cheese, cilantro, garlic powder, onion powder, salt, and pepper.
- Place a tortilla in the skillet, add a portion of the filling, and top with another tortilla.
- Cook until the bottom is golden brown, then flip and cook the other side.
- Remove from skillet, cut into wedges, and serve warm.
Notes
- Feel free to customize the filling with your favorite ingredients.
- Serve with salsa or guacamole for added flavor.
- These quesadillas can be made vegetarian by omitting the chicken.
