Description

Delicious and romantic quesadillas perfect for a Valentine’s Day dinner.


Ingredients

Scale
  • 4 large flour tortillas
  • 2 cups shredded cheese (cheddar or mozzarella)
  • 1 cup cooked chicken, shredded
  • 1/2 cup diced bell peppers
  • 1/2 cup sliced mushrooms
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add bell peppers and mushrooms, sauté until tender.
  3. In a bowl, mix shredded chicken, sautéed vegetables, cheese, cilantro, garlic powder, onion powder, salt, and pepper.
  4. Place a tortilla in the skillet, add a portion of the filling, and top with another tortilla.
  5. Cook until the bottom is golden brown, then flip and cook the other side.
  6. Remove from skillet, cut into wedges, and serve warm.

Notes

  • Feel free to customize the filling with your favorite ingredients.
  • Serve with salsa or guacamole for added flavor.
  • These quesadillas can be made vegetarian by omitting the chicken.
