Description

A delicious and healthy pasta dish featuring roasted vegetables and feta cheese, perfect for a quick weeknight dinner.


Ingredients

  • 8 oz pasta of choice
  • 2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the pasta according to package instructions; drain and set aside.
  3. On a baking sheet, toss the mixed vegetables with olive oil, garlic powder, oregano, salt, and pepper.
  4. Roast the vegetables in the oven for 20-25 minutes until tender and slightly caramelized.
