Description

A delicious and healthy side dish featuring roasted sweet potato rounds drizzled with honey and topped with feta cheese.


Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 1/2 cup crumbled feta cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into 1/2 inch rounds.
  3. In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
  4. Arrange the sweet potato rounds on a baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until tender and golden.
  6. Drizzle the roasted sweet potatoes with honey and sprinkle with crumbled feta cheese.
  7. Return to the oven for an additional 5 minutes to warm the feta.
  8. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the sweet potatoes before roasting.
  • These can be served warm or at room temperature.
