- 1 cup fresh strawberries, hulled and halved
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 cup ricotta cheese
- 1 teaspoon vanilla extract
- 4 slices of bread (your choice)
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the strawberries with olive oil and honey.
- Spread the strawberries on a baking sheet and roast for 15-20 minutes until soft and caramelized.
- In a separate bowl, mix the ricotta cheese with vanilla extract until smooth and creamy.
- Toast the bread slices until golden brown.
- Spread the whipped ricotta on each slice of toast.
- Top with the roasted strawberries.
- Garnish with fresh mint leaves if desired.
