Description

A delightful toast topped with creamy whipped ricotta and sweet roasted strawberries, perfect for breakfast or a snack.


Ingredients

  • 1 cup fresh strawberries, hulled and halved
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 4 slices of bread (your choice)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the strawberries with olive oil and honey.
  3. Spread the strawberries on a baking sheet and roast for 15-20 minutes until soft and caramelized.
  4. In a separate bowl, mix the ricotta cheese with vanilla extract until smooth and creamy.
  5. Toast the bread slices until golden brown.
  6. Spread the whipped ricotta on each slice of toast.
  7. Top with the roasted strawberries.
  8. Garnish with fresh mint leaves if desired.
