- 4 medium beets, peeled and cut into wedges
- 4 medium carrots, peeled and sliced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces burrata cheese
- Fresh arugula or mixed greens
- Balsamic glaze for drizzling
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the beets and carrots with olive oil, salt, and pepper.
- Spread the vegetables on a baking sheet and roast for 25-30 minutes, or until tender.
- Remove from the oven and let cool slightly.
- On a serving platter, arrange the arugula or mixed greens.
- Top with the roasted beets and carrots.
- Place burrata cheese on top and drizzle with balsamic glaze.
