Ingredients

- 1 cup of rice
- 1 can (15 oz) of black beans, drained and rinsed
- 1 can (13.5 oz) of coconut milk
- 2 cups of vegetable broth
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté the chopped onion and minced garlic until translucent.
- Add the rice, black beans, coconut milk, vegetable broth, cumin, paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and cover.
- Simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork and garnish with fresh cilantro before serving.
Notes
- For added flavor, consider adding a squeeze of lime juice before serving.
- This dish can be served as a main course or a side dish.
