Description

A vibrant and refreshing Raw Carrot Salad with zesty lime juice and nutty sesame seeds, perfect for any occasion.


Ingredients

Scale
  • 3 large carrots, peeled and ends trimmed
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lime juice
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon agave or maple syrup
  • 1/2 teaspoon ground coriander
  • 1/8 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon kosher salt
  • 2 tablespoons chopped parsley
  • 2 teaspoons sesame seeds
  • Optional: 1 tablespoon chopped cilantro or mint

Instructions

  1. Begin by peeling the carrots. Remove the ends and then grate them using a box grater or food processor.
  2. Transfer the grated carrots into a large mixing bowl and set aside.
  3. In a small bowl, whisk together the olive oil, fresh lime juice, apple cider vinegar, agave, ground coriander, cayenne (if using), and kosher salt until well combined.
  4. Taste the dressing and adjust the seasoning if necessary.
  5. Pour the dressing over the grated carrots and toss everything together.
  6. Add the chopped parsley and sesame seeds, gently folding them into the mix.
  7. Serve right away, or store in the fridge for up to two days.

Notes

For extra flavor, let the salad sit for about 30 minutes before serving. It tastes even better the next day.
