Description

Pink Coconut Snowball Cake Bars are a delightful and visually appealing dessert that combines the flavors of coconut and a hint of sweetness, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon salt
  • Pink food coloring (as desired)
  • 1 cup powdered sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • Additional shredded coconut for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, combine the flour, shredded coconut, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Add pink food coloring to achieve the desired shade and mix well.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool completely before frosting.
  10. For the frosting, mix powdered sugar and milk until smooth, then spread over the cooled cake.
  11. Sprinkle additional shredded coconut on top of the frosting.
  12. Cut into bars and serve.
