- 4 chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup fresh cilantro
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 2 cloves garlic
- 1 jalapeño, seeded
- Juice of 1 lime
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil, cumin, paprika, salt, and pepper.
- Coat the chicken breasts with the spice mixture.
- Place the chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
- While the chicken is baking, prepare the green sauce by blending cilantro, mayonnaise, Greek yogurt, garlic, jalapeño, and lime juice until smooth.
- Once the chicken is done, let it rest for a few minutes before slicing.
- Serve the chicken with the green sauce drizzled on top or on the side.
Notes
- For a spicier sauce, leave some seeds in the jalapeño.
- This dish pairs well with rice or a fresh salad.
