Description

A comforting and delicious one-pot pasta dish inspired by classic French onion soup, featuring caramelized onions, rich broth, and melted cheese.


Ingredients

  • 12 oz pasta (such as penne or rigatoni)
  • 4 large onions, thinly sliced
  • 4 cups beef or vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup grated Gruyère cheese
  • 1 cup grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil and butter over medium heat. Add sliced onions and cook until caramelized, about 20-25 minutes.
  2. Add thyme, garlic powder, salt, and pepper to the onions, stirring to combine.
  3. Pour in the broth and bring to a simmer.
  4. Add the pasta and cook according to package instructions until al dente.
  5. Stir in the Gruyère and Parmesan cheese until melted and creamy.
  6. Transfer to a baking dish and top with additional cheese if desired.
  7. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until bubbly and golden.

Notes

  • For a vegetarian version, use vegetable broth and omit any meat-based ingredients.
