- 12 oz pasta (such as penne or rigatoni)
- 4 large onions, thinly sliced
- 4 cups beef or vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 teaspoon thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup grated Gruyère cheese
- 1 cup grated Parmesan cheese
Instructions
- In a large pot, heat olive oil and butter over medium heat. Add sliced onions and cook until caramelized, about 20-25 minutes.
- Add thyme, garlic powder, salt, and pepper to the onions, stirring to combine.
- Pour in the broth and bring to a simmer.
- Add the pasta and cook according to package instructions until al dente.
- Stir in the Gruyère and Parmesan cheese until melted and creamy.
- Transfer to a baking dish and top with additional cheese if desired.
- Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until bubbly and golden.
Notes
- For a vegetarian version, use vegetable broth and omit any meat-based ingredients.
- Feel free to add cooked chicken or mushrooms for extra protein.
