- 1 pre-baked pie crust
- 1 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 3/4 cups milk
- 3 large egg yolks, beaten
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- Whipped cream for topping (optional)
Instructions
- In a saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
- Gradually add milk while stirring to combine.
- Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble.
- Remove from heat and stir a small amount of the hot mixture into the beaten egg yolks to temper them.
- Return the egg yolk mixture to the saucepan and cook for an additional 2 minutes.
- Remove from heat and stir in butter and vanilla extract until smooth.
- Pour the chocolate filling into the pre-baked pie crust.
- Let it cool at room temperature, then refrigerate for at least 4 hours before serving.
- Top with whipped cream if desired before serving.
Notes
- For a richer flavor, use dark chocolate cocoa powder.
- Make sure to whisk constantly to prevent the mixture from burning.
- This pie can be made a day in advance for convenience.
