- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon Dijon mustard
- 1 cup red wine
- 1 cup beef broth
Instructions
- Preheat your oven to 425°F (220°C).
- Trim the beef tenderloin of excess fat and silver skin.
- In a small bowl, mix together olive oil, salt, pepper, garlic, rosemary, thyme, and Dijon mustard.
- Rub the mixture all over the beef tenderloin.
- Heat a large oven-safe skillet over medium-high heat and sear the tenderloin on all sides until browned.
- Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
- Remove the tenderloin from the oven and let it rest for 10-15 minutes before slicing.
- In the same skillet, add red wine and beef broth, scraping up any browned bits, and simmer until reduced by half to create a sauce.
- Slice the tenderloin and serve with the sauce drizzled on top.
