Description

Ingredients

  • 1 (4-5 pound) beef tenderloin
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon Dijon mustard
  • 1 cup red wine
  • 1 cup beef broth

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the beef tenderloin of excess fat and silver skin.
  3. In a small bowl, mix together olive oil, salt, pepper, garlic, rosemary, thyme, and Dijon mustard.
  4. Rub the mixture all over the beef tenderloin.
  5. Heat a large oven-safe skillet over medium-high heat and sear the tenderloin on all sides until browned.
  6. Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  7. Remove the tenderloin from the oven and let it rest for 10-15 minutes before slicing.
  8. In the same skillet, add red wine and beef broth, scraping up any browned bits, and simmer until reduced by half to create a sauce.
  9. Slice the tenderloin and serve with the sauce drizzled on top.
