Description

Ingredients

  • 1 cup diced cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1 cup cooked chicken or lamb, sliced
  • 1/2 cup tzatziki sauce
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup kalamata olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cooked quinoa, diced cucumber, cherry tomatoes, and red onion.
  2. Add the sliced chicken or lamb to the bowl.
