- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup ketchup
- 1 egg
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 4 large potatoes, peeled and cubed
- 1/2 cup butter
- 1/2 cup milk (for mashed potatoes)
- Salt and pepper to taste (for mashed potatoes)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, milk, ketchup, egg, onion, garlic, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf and place it in a baking dish.
- Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C).
- While the meatloaf is baking, boil the potatoes in a large pot of salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
- Once the meatloaf is done, let it rest for 10 minutes before slicing.
- Serve slices of meatloaf with a generous scoop of mashed potatoes on the side.
Notes
- For added flavor, you can mix in herbs like parsley or thyme into the meatloaf mixture.
- Leftover meatloaf can be stored in the refrigerator for up to 3 days.
- This dish pairs well with steamed vegetables or a side salad.
