Description

Ingredients

  • 4 large russet potatoes
  • 1 pound shrimp, peeled and deveined
  • 6 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and dry the russet potatoes, then pierce them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for 45-60 minutes, or until tender.
  5. While the potatoes are baking, cook the shrimp in a skillet over medium heat until pink and cooked through.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly.
  7. Cut the potatoes open and fluff the insides with a fork.
