- 4 large russet potatoes
- 1 pound shrimp, peeled and deveined
- 6 slices of bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and dry the russet potatoes, then pierce them with a fork.
- Rub the potatoes with olive oil, salt, and pepper.
- Bake the potatoes for 45-60 minutes, or until tender.
- While the potatoes are baking, cook the shrimp in a skillet over medium heat until pink and cooked through.
- Once the potatoes are done, remove them from the oven and let them cool slightly.
- Cut the potatoes open and fluff the insides with a fork.
- Top each potato with shrimp, crumbled bacon, cheddar cheese, sour cream, and green onions.
- Serve immediately and enjoy!
