Ingredients

- 1 cup lentils
- 1 pound sausage (Italian or your choice)
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add chopped onion, carrots, and celery; sauté until softened.
- Add minced garlic and cook for another minute.
- Stir in the sausage and cook until browned.
- Add lentils, broth, diced tomatoes, thyme, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
- Adjust seasoning if necessary and serve hot.
Notes
- Feel free to add other vegetables like spinach or kale for extra nutrition.
- This stew can be made ahead of time and tastes even better the next day.
