Description

A hearty and flavorful stew made with lentils and sausage, perfect for a comforting meal.


Ingredients

  • 1 cup lentils
  • 1 pound sausage (Italian or your choice)
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 teaspoon thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery; sauté until softened.
  3. Add minced garlic and cook for another minute.
  4. Stir in the sausage and cook until browned.
  5. Add lentils, broth, diced tomatoes, thyme, cumin, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30-40 minutes until lentils are tender.
  7. Adjust seasoning if necessary and serve hot.

Notes

  • Feel free to add other vegetables like spinach or kale for extra nutrition.
  • This stew can be made ahead of time and tastes even better the next day.
