Description

Lemon Chicken and Veggie Orzo is a delicious and healthy dish that combines tender chicken, fresh vegetables, and orzo pasta, all tossed in a zesty lemon sauce.


Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Stir in garlic and cook for an additional minute.
  4. Add broccoli, bell pepper, and cherry tomatoes, cooking until vegetables are tender.
  5. Meanwhile, cook orzo in vegetable broth according to package instructions.
  6. Once orzo is cooked, drain and add to the skillet with chicken and vegetables.
  7. Stir in lemon juice, lemon zest, salt, and pepper.
  8. Garnish with fresh parsley before serving.
