Description
A low-carb reinterpretation of the classic Philly cheesesteak, these roll-ups feature savory beef, sautéed veggies, and melty cheese wrapped in crisp lettuce leaves.
Ingredients
Scale
- 1 pound ground beef or sausage
- 1 cup sliced bell peppers
- 1 cup sliced onions
- 1 cup shredded Monterey Jack cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Lettuce leaves (for wrapping)
Instructions
- Sauté the veggies: In a skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers and sauté until tender, about 3-5 minutes.
- Brown the meat: Add your ground beef or sausage to the skillet and cook until browned, breaking it apart as you go. Season with salt and pepper.
- Melt the cheese: Remove the skillet from heat and stir in the shredded cheese until melted and combined.
- Build your roll-ups: Lay out lettuce leaves, spoon the cheesy mixture onto each, and roll them like burritos.
- Serve and enjoy: Serve warm and savor the blend of flavors!
Notes
These roll-ups can be made ahead of time; just store the filling in the fridge for up to 3 days and reheat when ready to assemble.
