Description

A low-carb reinterpretation of the classic Philly cheesesteak, these roll-ups feature savory beef, sautéed veggies, and melty cheese wrapped in crisp lettuce leaves.

Ingredients

Scale
  • 1 pound ground beef or sausage
  • 1 cup sliced bell peppers
  • 1 cup sliced onions
  • 1 cup shredded Monterey Jack cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lettuce leaves (for wrapping)

Instructions

  1. Sauté the veggies: In a skillet, heat the olive oil over medium heat. Add the sliced onions and bell peppers and sauté until tender, about 3-5 minutes.
  2. Brown the meat: Add your ground beef or sausage to the skillet and cook until browned, breaking it apart as you go. Season with salt and pepper.
  3. Melt the cheese: Remove the skillet from heat and stir in the shredded cheese until melted and combined.
  4. Build your roll-ups: Lay out lettuce leaves, spoon the cheesy mixture onto each, and roll them like burritos.
  5. Serve and enjoy: Serve warm and savor the blend of flavors!

Notes

These roll-ups can be made ahead of time; just store the filling in the fridge for up to 3 days and reheat when ready to assemble.
