- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1/2 teaspoon Italian seasoning (optional)
- 2 tablespoons low-sugar pizza sauce (optional)
- Cooking spray or olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the mini muffin pan by lightly greasing each cup with cooking spray or olive oil.
- Form the base by placing one slice of pepperoni into each muffin cup.
- Mix the cheeses in a bowl, combining mozzarella and parmesan, and add Italian seasoning if desired.
- Build your pizza by scooping a small spoonful of the cheese mixture atop each pepperoni slice, adding pizza sauce if using.
- Bake for 10 to 12 minutes, until cheese bubbles and turns golden brown.
- Cool for 5 minutes, then gently loosen with a knife and remove from the pan.
