Description

Delicious roll-ups that embody all the flavors of a classic Reuben sandwich while being keto-friendly.


Ingredients

  • 8 slices of cheese (Swiss or your choice)
  • 8 ounces of corned beef, sliced
  • 1 cup sauerkraut, drained
  • 1 tablespoon mustard (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your baking sheet by lining it with parchment paper.
  3. Melt the cheese by placing a slice on the baking sheet and bake for about 5 minutes.
  4. Load up the melted cheese with corned beef, sauerkraut, and mustard if desired.
  5. Roll the cheese around the filling to create a roll-up.
  6. Bake the roll-ups again for another 3-5 minutes until golden and crispy.
