Description

A hearty and flavorful Italian Sausage Soup inspired by the popular Zuppa Toscana, featuring savory sausage, fresh vegetables, and creamy broth.


Ingredients

  • 1 lb Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 2 medium potatoes, diced
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the diced potatoes and cook until tender, about 10-15 minutes.
  5. Stir in the chopped kale and cook for an additional 5 minutes.
