- 1 cup ricotta cheese
- 1/2 cup sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sliced almonds
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the ricotta cheese, sugar, and butter until smooth.
- Add the egg, vanilla extract, and almond extract, mixing well.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the sliced almonds.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until the edges are lightly golden.
- Allow to cool on a wire rack before serving.
Notes
- For a sweeter cookie, increase the sugar to 3/4 cup.
- These cookies can be stored in an airtight container for up to a week.
- Feel free to add chocolate chips for a different flavor.
