Description

Delicious Italian cookies made with ricotta cheese and almond flavor, perfect for any occasion.


Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the ricotta cheese, sugar, and butter until smooth.
  3. Add the egg, vanilla extract, and almond extract, mixing well.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the sliced almonds.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes or until the edges are lightly golden.
  9. Allow to cool on a wire rack before serving.

Notes

  • For a sweeter cookie, increase the sugar to 3/4 cup.
  • These cookies can be stored in an airtight container for up to a week.
