Description

A delightful and festive preserve made with strawberries and rhubarb, perfect for holiday gifting or enjoying on toast.


Ingredients

  • 2 cups strawberries, hulled and sliced
  • 2 cups rhubarb, chopped
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1 package (1.75 oz) fruit pectin

Instructions

  1. In a large pot, combine strawberries, rhubarb, and sugar. Let sit for 30 minutes to macerate.
  2. Add lemon juice and fruit pectin to the pot and stir well.
  3. Bring the mixture to a boil over medium heat, stirring constantly.
  4. Once boiling, continue to cook for 10-15 minutes until the mixture thickens.
  5. Remove from heat and ladle into sterilized jars.
  6. Seal jars and process in a boiling water bath for 10 minutes.
  7. Let cool completely before storing in a cool, dark place.
