- 2 cups strawberries, hulled and sliced
- 2 cups rhubarb, chopped
- 1 cup sugar
- 1/4 cup lemon juice
- 1 package (1.75 oz) fruit pectin
Instructions
- In a large pot, combine strawberries, rhubarb, and sugar. Let sit for 30 minutes to macerate.
- Add lemon juice and fruit pectin to the pot and stir well.
- Bring the mixture to a boil over medium heat, stirring constantly.
- Once boiling, continue to cook for 10-15 minutes until the mixture thickens.
- Remove from heat and ladle into sterilized jars.
- Seal jars and process in a boiling water bath for 10 minutes.
- Let cool completely before storing in a cool, dark place.
