Description

A savory High-Protein Cottage Cheese Veggie Bake filled with melting cheese and vibrant veggies, perfect for a healthy family meal.


Ingredients

  • 2 cups cottage cheese
  • 3 large eggs
  • 2 cups frozen mixed veggies
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil (for greasing the pan)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the baking dish by lightly greasing it with olive oil.
  3. Whisk together the cottage cheese and eggs until smooth.
  4. Mix in the frozen mixed veggies, shredded cheddar, garlic powder, onion powder, salt, and pepper.
  5. Transfer the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 30-35 minutes or until the top is golden brown.
  7. Slice into squares and serve warm.

Notes

You can prepare the mixture a day in advance and store it in the refrigerator. This dish can also be made in an air fryer for a crispy finish.
