Description

A delicious and healthy meal featuring herbed chicken served over fluffy couscous, topped with refreshing tzatziki sauce.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup couscous
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cucumber, grated
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • Fresh dill for garnish

Instructions

  1. In a bowl, mix the diced chicken with olive oil, oregano, thyme, garlic powder, salt, and pepper.
  2. Heat a skillet over medium heat and cook the chicken until golden brown and cooked through, about 7-10 minutes.
  3. In a saucepan, bring chicken broth to a boil and add couscous. Remove from heat, cover, and let it sit for 5 minutes.
  4. Fluff the couscous with a fork and set aside.
  5. In a separate bowl, combine grated cucumber, Greek yogurt, lemon juice, salt, and pepper to make the tzatziki sauce.
  6. To assemble, place couscous in bowls, top with herbed chicken, and drizzle with tzatziki sauce. Garnish with fresh dill.
