Hawaiian Huli Huli Chicken Stack is a delicious and flavorful dish that combines marinated chicken with fresh vegetables and a tangy sauce, perfect for a summer meal.

- 4 boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup pineapple juice
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 4 hamburger buns
- Fresh pineapple slices (for grilling)
- Green onions, chopped (for garnish)
Instructions
- In a bowl, mix soy sauce, brown sugar, ketchup, pineapple juice, garlic, ginger, and sesame oil to create the marinade.
- Add chicken thighs to the marinade and let them soak for at least 1 hour, preferably overnight.
- Preheat the grill to medium-high heat.
- Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked.
- While the chicken is grilling, sauté the sliced bell peppers and onion until tender.
- Grill the pineapple slices for 2-3 minutes on each side until caramelized.
- Assemble the stack by placing grilled chicken on the bottom, followed by sautéed vegetables, grilled pineapple, and top with green onions.
- Serve on hamburger buns and enjoy!
Notes
- For a spicier kick, add some chili flakes to the marinade.
- Can substitute chicken thighs with chicken breasts if preferred.
- Serve with a side of rice or salad for a complete meal.
