- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In another bowl, mix the oil and eggs until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Fold in the grated carrots, crushed pineapple, and walnuts if using.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- For the glaze, beat together cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla, mixing until creamy.
- Once the cakes are cool, spread the cream cheese glaze on top of one layer, place the second layer on top, and frost the top and sides of the cake.
Notes
- Ensure the pineapple is well-drained to avoid a soggy cake.
- For added flavor, consider adding coconut flakes to the batter.
- This cake can be made a day in advance and stored in the refrigerator.
