Description

A delightful summer salad featuring grilled nectarines, creamy burrata cheese, and savory prosciutto, perfect for a light meal or appetizer.


Ingredients

  • 2 ripe nectarines, halved and pitted
  • 8 oz burrata cheese
  • 4 oz prosciutto, thinly sliced
  • 2 cups arugula
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Brush the cut sides of the nectarines with olive oil.
  3. Grill the nectarines for about 3-4 minutes until grill marks appear and they are slightly softened.
  4. In a large bowl, combine arugula, grilled nectarines, and prosciutto.
  5. Drizzle with balsamic vinegar and additional olive oil.
  6. Gently tear the burrata and place it on top of the salad.
  7. Season with salt and pepper to taste.
  8. Toss gently and serve immediately.

Notes

  • For added flavor, consider adding toasted nuts or seeds.
