- 2 ripe nectarines, halved and pitted
- 8 oz burrata cheese
- 4 oz prosciutto, thinly sliced
- 2 cups arugula
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Brush the cut sides of the nectarines with olive oil.
- Grill the nectarines for about 3-4 minutes until grill marks appear and they are slightly softened.
- In a large bowl, combine arugula, grilled nectarines, and prosciutto.
- Drizzle with balsamic vinegar and additional olive oil.
- Gently tear the burrata and place it on top of the salad.
- Season with salt and pepper to taste.
- Toss gently and serve immediately.
