Ingredients

- 1 package of gnocchi (about 500g)
- 1 cup cherry tomatoes, halved
- 1 cup spinach, fresh
- 1 cup feta cheese, crumbled
- 1/2 cup olives, pitted and sliced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large baking dish, combine the gnocchi, cherry tomatoes, spinach, feta cheese, and olives.
- Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
- Toss everything together until well mixed.
- Bake in the preheated oven for 25-30 minutes, or until the gnocchi is golden and the cheese is bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or zucchini.
- This dish can be served as a main course or a side dish.
- Leftovers can be stored in the refrigerator for up to 3 days.
