Description

A delicious and easy one-pan dish featuring gnocchi baked with Greek-inspired ingredients.


Ingredients

  • 1 package of gnocchi (about 500g)
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 cup feta cheese, crumbled
  • 1/2 cup olives, pitted and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine the gnocchi, cherry tomatoes, spinach, feta cheese, and olives.
  3. Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
  4. Toss everything together until well mixed.
  5. Bake in the preheated oven for 25-30 minutes, or until the gnocchi is golden and the cheese is bubbly.
  6. Remove from the oven and let it cool for a few minutes before serving.

Notes

  • Feel free to add other vegetables like bell peppers or zucchini.
  • This dish can be served as a main course or a side dish.
