- 2 cups rolled oats
- 1 cup pecans, chopped
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rolled oats, chopped pecans, salt, and cinnamon.
- In a separate bowl, mix together maple syrup, melted coconut oil, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and stir until well combined.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and let it cool completely before storing.
Notes
- Store in an airtight container for up to two weeks.
- Feel free to add dried fruits or chocolate chips after baking for extra flavor.
- Adjust the sweetness by adding more or less maple syrup according to your taste.
