Ingredients

- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 red onion, thinly sliced
- 1/2 cup carrots, shredded
- 1/4 cup olives, sliced
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and dry the mixed greens thoroughly.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, bell pepper, red onion, carrots, and olives.
- If using, sprinkle the feta cheese over the salad.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately and enjoy!
