Description

Fluffy Japanese Soufflé Pancakes are light, airy, and incredibly soft pancakes that are a delightful treat for breakfast or dessert.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 2 large eggs
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • Butter for cooking

Instructions

  1. In a bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, beat the egg yolks, then add milk, sugar, and vanilla extract.
  3. Combine the wet and dry ingredients until just mixed.
  4. In a separate bowl, beat the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the batter until no white streaks remain.
  6. Heat a non-stick skillet over low heat and grease with butter.
  7. Pour a scoop of batter onto the skillet and cover with a lid.
  8. Cook for about 4-5 minutes, then flip and cook for another 4-5 minutes until golden brown.
  9. Serve warm with syrup, fruit, or whipped cream.

Notes

  • For extra fluffiness, ensure the egg whites are beaten to stiff peaks.
  • Cook on low heat to prevent burning while ensuring the inside cooks through.
  • Experiment with different toppings like matcha or chocolate sauce.
