Description

The Envelope-Method Roast is a cooking technique that ensures your meat is juicy and flavorful by sealing it in a pouch during roasting.


Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 lemon, sliced
  • Fresh herbs (such as rosemary or thyme)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a large piece of parchment paper or aluminum foil, large enough to wrap the chicken.
  3. In a bowl, mix olive oil, salt, pepper, and minced garlic.
  4. Rub the mixture all over the chicken, including under the skin.
  5. Place lemon slices and fresh herbs inside the cavity of the chicken.
  6. Wrap the chicken tightly in the parchment paper or foil, creating a sealed envelope.
  7. Place the wrapped chicken on a baking sheet and roast in the preheated oven for about 1.5 hours.
  8. Remove from the oven and let it rest for 10-15 minutes before unwrapping.
  9. Carve and serve the chicken, enjoying the juicy flavors.
