- 1 whole chicken (about 4–5 lbs)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 teaspoon black pepper
- 4 cloves garlic, minced
- 1 lemon, sliced
- Fresh herbs (such as rosemary or thyme)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare a large piece of parchment paper or aluminum foil, large enough to wrap the chicken.
- In a bowl, mix olive oil, salt, pepper, and minced garlic.
- Rub the mixture all over the chicken, including under the skin.
- Place lemon slices and fresh herbs inside the cavity of the chicken.
- Wrap the chicken tightly in the parchment paper or foil, creating a sealed envelope.
- Place the wrapped chicken on a baking sheet and roast in the preheated oven for about 1.5 hours.
- Remove from the oven and let it rest for 10-15 minutes before unwrapping.
- Carve and serve the chicken, enjoying the juicy flavors.

- For added flavor, marinate the chicken overnight.
- Experiment with different herbs and spices to customize the taste.
- Ensure the chicken is fully cooked by checking the internal temperature (165°F or 75°C).
